Swine & Sons Provisions opens its doors April 3

We finally have a date: Swine & Sons Provisions opens its doors to the general public April 3, selling smoked and cured meats, sandwiches made to order, house-made ice cream, biscuits, jams and jellies and other accoutrements built for a Southern palate. Oh, and let's not forget: They'll also offer "crowlers" (32-ounce rather than the traditional 64-ounce growler, currently illegal in Florida, though that may change at any second) of beer from the Cask & Larder brewery, their sister establishment just steps away. Swine & Sons is located at 595 W. Fairbanks Ave. in Winter Park.

Husband-and-wife chef-entrepreneur duo James and Julie Petrakis, who launched their highly successful local businesses with the Ravenous Pig gastropub, have tapped another married couple to head up Swine & Sons: Alexia and Rhys Gawlak will partner with the Petrakises as well as contributing in the kitchen, playing to their strengths with house-cured/aged/smoked charcuterie and inventive pastries and sweets.

Swine & Sons Provisions Announces April 3 Grand Opening

Winter Park, Fla. – Swine & Sons Provisions, the highly anticipated new endeavor from James and Julie Petrakis, chefs and owners of The Ravenous Pig and Cask & Larder, will open to the public on Friday, April 3. The third Winter Park operation from the James Beard nominated husband and wife tandem will incorporate Cask & Larder’s sophisticated southern cuisine and The Ravenous Pig’s innovative flare for modern fine dining, while introducing a novel takeout concept to Central Florida.

Located immediately west of Cask & Larder at 595 West Fairbanks Avenue in Winter Park, Swine & Sons Provisions will specialize in takeout charcuterie, made-to-order butcher sandwiches, seasonally inspired homemade ice cream, signature spices and rubs, scratch-made biscuits, daily pastry offerings and more. The store will also have limited indoor seating for guests to enjoy their meals at Swine & Sons. Daily lunch offerings will include innovative twists on classic favorites, including a ribeye hotdog and pimento grilled cheese.

Open Tuesday thru Sunday from 10 a.m. until 7 p.m., Swine & Sons will also prepare daily to-go dinner specials. A weekly “Blue Pig Special” menu will be updated on Swine & Sons’ website every Monday and will feature new signature dishes as well as popular items from Cask & Larder and The Ravenous Pig including buttermilk fried chicken and smoked brisket. To-go dinners will be accompanied by a variety of scratch-made sides such as bacon candied collard greens and marinated tomatoes.

Swine & Sons will sell 32-ounce crowlers of beers sourced from Cask & Larder’s acclaimed brewery, available to-go or for guests to enjoy in the store. Popular beer varieties including Cask & Larder’s Red Drum, Lone Palm Gold and Olde Southern Wit will be offered, along with Swine Family Wine.
“The same local support that has humbled us ever since opening The Ravenous Pig nearly eight years ago, then again with Cask & Larder, is what inspired Swine & Sons,” said Julie Petrakis. “The shop will stock favorites from both restaurants, while introducing a new line of small batch items unique to Swine & Sons Provisions.”

Longtime Ravenous Pig and Cask & Larder chef Rhys Gawlak and wife Alexia Gawlak join the Petrakis’s as partners in Swine & Sons. “Alexia and I have wanted to introduce a first-of-its-kind concept like Swine & Sons to Central Florida for a while now,” said Rhys Gawlak. “The timing and location were finally perfect and extending The Ravenous Pig and Cask & Larder brands with the launch of Swine & Sons is a natural fit.”

The Gawlaks will incorporate seasonal, local ingredients into the daily menu. Rhys will spearhead the charcuterie program, offering a selection of cured, dry aged and smoked meats available for dine-in guests, to-go customers, private parties and catered events.

Alexia will oversee Swine & Sons pastry and dessert department. Highlights will include brioche rolls with bitter chocolate, Cuban scones and maple bacon macarons.

Longtime Ravenous Pig and Cask & Larder manager Kailey Krips will manage Swine & Sons. As store manager, she will head day-to-day operations and be point of contact for special events, private functions and catering inquiries.
