Restaurateur Hoi Nguyen, the man behind Chi-Kin/Side Chik, Poke Hana and Moa Kai Hawaiian Diner in Mills 50, is bringing a whole new concept to Windermere. Seoul Bōl, billed as a “modern Korean wellness bowl restaurant,” will open this week in the space at 5845 Winter Garden Vineland Road.
The building previously housed a second location of Chi-Kin but, Nguyen says, that was never the intent.

“We were rushed to put something in here when we opened Chi-Kin in October 2025, but we should’ve done more market research before offering Korean fried chicken in this location. The demographic of the area is more suited to quick, healthy meals, which is why Poke Hana Winderemere does so well.”
Seoul Bōl will offer customizable bowls built around proteins, banchan and house-made sauces designed to be both comforting and health-forward.

“With a calm, hanok-inspired modern space, Seoul Bōl will be all about balance — flavor and nutrition, tradition and innovation and fast service without sacrificing quality,” Nguyen says.
