This national "upscale casual" chain has decided to make a mutant lasagna to celebrate the national layered-pasta day. Brio's version is a combo of eggplant parmigana with lasagna, a fully veg-friendly version, with fried eggplant slices, roasted red peppers, spinach and mushrooms sandwiched between pasta sheets with red sauce and mozzarella.
