“Chibi” means “little,” and while the menu will not be as large as the flagship Domu, they promise Chibi “will still offer a variety of ramen options including a tonkotsu, shio, shoyu, and miso. Along with that, there will a few options for sides such as gyoza, edamame, chicken karaage, and bravas fries (a play on our fingerling bravas at DOMU).”
That core menu of ramens will still offer house-made broths and noodles, but flatware and serveware will be disposable, ordering will be done by patrons at a kiosk, and all seating will be “bar/ledge-style.”
We reported last June that Domu would open a Jacksonville location in 2018, and in January that owner Sonny Nguyen would open an izakaya concept on Mills called Tori Tori Pub this summer.
