Located in O-Town West Orlando, Florida, Sushi Izuki is Orlando’s newest premium omakase experience offering an elevated 18-course dining journey focused on seasonality, craftsmanship, and innovation. The experience includes five rotating appetizers, 11 pieces of nigiri sushi, a handroll, and a dessert to finish the meal. The restaurant also specializes in dry-aging a majority of its fish to enhance texture, deepen flavor, and ensure optimal quality before service.

Leading the restaurant is Chef Owner Leo, who relocated from New York to Orlando alongside much of his team. With more than 18 years of omakase experience, Chef Leo has worked at several renowned omakase restaurants throughout New York and California. Prior to opening his own concept, he served as Head Chef at a Michelin-rated omakase restaurant in New York City, where he built a reputation for excellence within one of the country’s most competitive Japanese dining scenes. His move to Orlando was driven by a desire to pursue a Michelin star for his own restaurant while creating a refined yet welcoming omakase experience for guests.

The menu is inspired by Japan’s changing seasons and microseasons while also embracing the influence of American weather and ingredients. Every course is designed to reflect the time of year, creating a dining experience that continuously evolves. Guests may enjoy warm chawanmushi topped with ikura and truffle during cooler months or refreshing seasonal oysters during the summer. The rotating appetizers are crafted to appeal to a variety of palates, from rich and buttery baked yuzu miso black cod to brighter dishes such as kanpachi with truffle.

Once the nigiri portion begins, guests are taken on a culinary journey through Japan. At the center of the experience is the sushi rice — a premium short-grain rice sourced from Hokkaido, Japan. Carefully prepared and infused with a blend of specialty vinegars, the rice develops a balanced flavor profile and a signature light brown hue. Paired with selections such as dry-aged fatty bluefin tuna and seasonal fish, each course highlights both traditional technique and modern innovation.

To conclude the experience, guests are served a house-made matcha pudding that provides a light and balanced finish to the meal. Through carefully curated ingredients, seasonal inspiration, and meticulous preparation, the restaurant aims to create a memorable omakase experience that evolves throughout the year.
