Recipes for the jack-o'-lantern

Pumpkin-carving season is shifting into high gear. If you decide to tackle the job at home, you're likely to have a lot of leftovers. What to do with all that pumpkin stuff? Toasting the seeds in the oven is easy -- just grease a cookie sheet, add some salt and broil them for about 10 minutes. But there's more.

The web is filled with recipes. Global Gourmet offers "Recent Recipes" such as pumpkin pancakes -- add some pureed pumpkin to your regular pancake batter, with a dash of cloves, cinnamon and nutmeg.

And the Epicurious features more than 8,000 recipes from Bon Appetit and Gourmet. A search turned up more than 70 ways to recycle, including spicy pumpkin soup with Mexican cream and toasted pepitas, and penne with pumpkin sauce.
