Head due north and follow your pancake cravings to DeLeon Springs State Recreational Area and The Old Spanish Sugar Mill restaurant (386-985-5644; 9 a.m.-4 p.m. Monday-Friday, 8 a.m.-4 p.m. Saturday, Sunday and holidays).

It's one of those places that people might joke about, but it's worth the 45-mile trip. There's the gorgeous park, 600 acres of one of the purest remaining examples of Old Florida. Once you finish canoeing, hiking and swimming, it's time for a hearty breakfast!

Making your own pancakes on a hot griddle in a rustic restaurant in the wilds might sound odd, but here you are indeed handed a pitcher of batter (white or stone-ground flour) and told to get to work, right at the table. It's fun and tasty, and the cost for the whole deal starts at only $4 a person (park entrance is an additional $4 per car), for the experience I-Hop just can't match.
