Vietnamese lunch pop-up ChauHaus debuts next month inside Winter Park's Sushi Pop

ChauHaus, the Vietnamese lunch “pop-up” inside Chau Trinh’s recently opened Sushi Pop in Winter Park, will debut Wednesday, March 6.

The menu will feature Southern Vietnam’s greatest hits: pho, bun bo hue, banh mi, duck curry, rice and noodle bowls with grilled lemongrass pork and pork sausage.


Last June Trinh told us in BITE magazine: "My grandmother was an amazing cook … Mom is a great cook, too, and we're currently collaborating on recipes for ChauHaus."

Trinh is especially excited to fire up his new Kosei Grill, a gas-charcoal-infrared hybrid. "I'm super stoked about it," Trinh says. "Every food stall in Vietnam uses charcoal for their meats — it's the reason everything tastes so good. That juicy, thick fat and smoke flavor can’t be replaced solely by gas."



As far as we know, Sushi Pop will be the only restaurant in the city to employ the Kosei Grill – others use straight binchotan grills without gas.
