Pizza joint Your Pie opening downtown in the SkyHouse

Athens, Georgia-based pizzeria Your Pie will open on the ground floor of the SkyHouse Orlando luxury apartment building at 335 N. Magnolia Drive across from the Orange County Courthouse building.

The fast-casual, build-your-own personal pizza, salad and panini joint is expected to open "in the next few weeks," possibly by the end of the month and, when they do, patrons can expect their pizzas to be served up piping hot in just four minutes, courtesy of brick ovens reaching temperatures in excess of 800 degrees Fahrenheit.

Customers choose their dough (white, wheat, gluten-free), sauce (marinara, EVOO, basil-pesto, BBQ, Buffalo), cheese (fresh mozzarella, shredded mozzarella, ricotta, feta, vegan cheese) and toppings, and follow similar suit for salads (bowl > greens > toppings > cheese > dressing) and panini (bread > cheese > toppings > sauce).

The chain's first Orlando outpost will also serve local beverage brands like Quantum Leap Winery, Crooked Can Brewing Co., Ten 10 Brewing Co. and Orlando Brewing.

Gelato and sorbet will also be served.
