Julie and James Petrakis' Swine & Sons Provisions to open February 2015

Image via Swine & Sons Provisions Last month, we reported that Julie and James Petrakis planned to open Swine & Sons Provisions just west of Cask & Larder on Fairbanks Avenue in Winter Park. Today, we've got more details for you, including a projected opening date of February 2015. According to the website, the new venture will "specialize in takeout charcuterie, butcher sandwiches, seasonally inspired homemade ice creams, signature spices and rubs, scratch-made biscuits, daily pastry offerings and more."

Ravenous Pig and Cask & Larder chef de cuisine Rhys Gawlak will join the Petrakises as a partner in the new provisions shop, fresh on the heels of Cask & Larder being named one of America's best new restaurants by Esquire. Gawlak will oversee the charcuterie program, choosing cured meats, cheeses and local in-season ingredients to showcase daily.

Joining Gawlak at Swine & Sons Provisions is Koralyss Dominguez, who will take charge of the pastries and sweets, featuring some of the desserts she created in her longtime career at Ravenous Pig and Cask & Larder, as well as unveiling new creations.

“Since opening Ravenous Pig seven years ago and on the heels of celebrating Cask & Larder’s second anniversary, we’ve not only been humbled by the community’s support, but also its encouragement to keep growing,” said Julie Petrakis in a press release. “Swine & Sons Provisions is an extension of our first two locations but geared more to people with limited time or to those looking to recreate some of their favorite dishes at home.”

Yeah, yeah, cooking at home can be a good time, but here's the best part: You'll also be able to purchase growlers of beer from the Cask & Larder brewery. We're truly looking forward to that.
