The search was over the moment I stepped into Bite. Since both Between the Buns on Colonial Drive and Smitty's up in Lake Mary shut down, I've been desperately seeking sausage of the Vienna beef variety, so even though it's in Longwood, Bite is now my go-to hot dog joint of choice.
It was a little worrying to read "Anything worth doing is worth overdoing" and "It's better to burn out than it is to rust out," but the quotes by Mick Jagger and Neil Young emblazoned on the ketchup-colored walls have more to do with attitude than cooking wieners, which come in three varieties here: regular, spicy and jumbo.
The Chicago dog ($3.19) was snap-perfect, with plenty of celery salt and plump sport peppers, though I've set my eye on the Bloody Mary dog and the roasted garlic mashed potato dog for my next visit. Skin-on, hand-cut fries are cooked in 100 percent peanut oil, a la Five Guys – it's no coincidence that one of the staff members referred to Bite as the "Five Guys of hot dogs." In true Chi-town fashion, tables and counters are set with salt and vinegar only – if you want ketchup, you'll need to walk for it.
