Self-taught in craft bartending, Rene eventually decided to leave his office job behind to pursue his passion for a proper drink. “I prefer a spirited cocktail. I like to taste what I’m drinking.”
The English Channel
1.5 ounces Plymouth Gin
1.5 ounces Carpano Bianco Vermouth
2 dashes orange bitters
Chill serving glass with ice. Combine gin, vermouth and bitters with ice and stir for 30 seconds.
Discard ice from chilled coupe glass and rinse with three dashes of Cynar.
Strain cocktail into Cynar-rinsed glass.
Take an orange peel and express oils over the surface of the cocktail, rim the glass using the peel and garnish.
