Chef Nat Russell leaving Winter Park's Cafe de France to do his own thing in Sanford

, chef de cuisine at Park Avenue mainstay Café de France, has left the French restaurant to host a monthlong pop-up that may turn into a permanent business.
The Memphis-born chef currently lives in Sanford, and tells the Bokey, “If the choice is Park Avenue or Sanford, I’ll choose Sanford every day. I like the small-town feel, and the eclectic vibe in downtown.”
His First Avenue pop-up will be called the Tennessee Truffle and will feature modern Southern cuisine. Russell hopes to open by mid-May, and, if response is strong, he may extend his commitment to the space and become a permanent Sanford fixture.
